Pizza has to be my absolute favorite junk food, and I’m pretty sure I’d eat it every day if I could. But, since eating pizza on a regular basis is probably not the healthiest choice, I’ve been trying to find other ways to get my pizza fix.
I made these the other night when I found myself with way too many zucchinis in my fridge, so I decided to turn them into mini pizza crusts! I was shocked at how delicious these were, and the best part was they are keto approved!
The next time you are in the mood for pizza, skip calling the delivery guy and whip up a batch of these delicious Zucchini Pizza Bites, you won’t be disappointed!

#<b>Zucchini Pizza Bites</b>
PREP TIME: 10 minutes |COOK TIME: 30 minutes | Serves: 2-4
<li>1-2 Large Zucchini, sliced in 1/4 inch slices</li>
<li>Shredded mozzarella cheese</li>
<li>Pizza sauce (no added sugar)</li>
<li>Sliced olives (optional)</li>
1. Preheat oven to 350℉ and line a baking sheet with parchment paper
2. Cut zucchini into slices and lay flat on baking sheet
3. Top each slice with 1-1 ½ tablespoons of pizza sauce, shredded mozzarella and parmesan, pepperoni, and olives if desired.
4. Bake for 30 minutes.
5. Serve hot and enjoy!
