A friend hooked me on this watermelon salad a few years ago and now it’s a summertime staple! It’s the perfect balance of sweet with a little salty and the lime juice brings everything together. Watermelon is very nutritious, containing a lot of water and vitamins, such as vitamin C, A and B6. However, it does contain a lot of sugar, so please keep this in mind and don’t over indulge. This is a really simple dish that comes together in a matter of minutes and everyone will love it! Try bringing it to your next BBQ potluck or social gathering!
``Quick tip: Freeze the goat cheese for about 10 minutes before using- it crumbles much easier that way and doesn’t stick to your fingers as much!``
####Watermelon Salad with Mint and Goat Cheese
Prep Time: 10 minutes | Serves: 4-6
½ large watermelon, cubed<br>
3-4 tablespoons fresh mint, chopped (or to taste)<br>
½-1 lime, juiced (or to taste)<br>
4-6 oz. goat cheese, crumbled<br>
1.) In a large bowl, toss the watermelon with the mint and lime juice. Taste and add more mint and lime juice, if necessary. Sprinkle with goat cheese before serving.
