Taco Zucchini Boats

These taco stuffed zucchini are a healthier alternative to tacos or burritos, especially if you are looking for something naturally low carb. Stuffed with seasoned ground beef and topped with cheese, you wouldn’t even know that a vegetable is the vehicle for this flavorful dish. My family loved this meal and it certainly won’t be the last time I make it. I hope it’s a big hit with your family as well! <center> ``Quick tip: Chop up the leftovers and combine with a few other veggies for a quick and easy stir fry!`` ####Taco Zucchini Boats Prep Time: 15-20 minutes | Cook Time: 30-45 minutes | Serves: 4 </center> ####<b>Ingredients:</b> 4-6 medium-large zucchini, cut in half lengthwise<br> 1 pound grass-fed ground beef<br> 1 teaspoon salt<br> 1 teaspoon garlic powder<br> 1 teaspoon cumin<br> 1 teaspoon chili powder<br> 1 teaspoon smoked paprika<br> ½ teaspoon chipotle powder<br> 1 teaspoon oregano<br> ½ cup salsa<br> 2 tablespoons tomato paste, (thin out with a little bit of water)<br> 1 cup Mexican blend cheese, shredded Optional for serving: Fresh cilantro, green onion, sour cream, lime juice, guacamole, etc. ####<b>Directions:</b> 1.) Preheat the oven to 425°F and line a rimmed baking sheet with foil. A large glass dish will also work. Cut the zucchini lengthwise and carefully hollow out the center with a spoon, then place them on the prepared pan. Save the centers for another recipe or chop up and cook with the ground beef. 2.) In a large skillet over medium-high heat, cook the beef, breaking up into pieces as it cooks. Add the scooped out zucchini centers at this point, if using. Once the beef is no longer pink, drain the fat and stir in the spices, salsa and thinned out tomato paste. Simmer on low for about 5-10 minutes. There will probably be a little bit of beef leftover. 3.) Fill the hollowed zucchini halves with the meat mixture and top with shredded cheese. Cover with foil and bake until the zucchini is tender and the cheese is melted, about 30 minutes. Turn the heat up and broil until the cheese is golden brown. Top with green onions, cilantro or any other desired toppings and serve.
