Learn How To Make 7 Meals In 7 Minutes
I love spring rolls but they’re so involved and tricky to make. I recently had them at a Thai restaurant and have been craving them ever since, so I decided to make them in salad form. Let me tell you, it did not disappoint! I’ve made it twice since, one time without chicken and the other with. The recipe for that will come soon! In the meantime, you should make this salad and see for yourself how delicious it is!

####Spring Roll Salad with Peanut Dressing
Prep Time: 20-30 minutes | Serves: 2-4
1-2 heads butter lettuce, torn into pieces<br>
1 bell pepper, sliced<br>
1 carrot, sliced<br>
½-1 cucumber, sliced<br>
½-1 cup cabbage, shredded<br>
2-4 tablespoons mint, chopped<br>
2-4 tablespoons cilantro, chopped<br>
2-4 tablespoons fresh basil, chopped<br>
Lime juice, to taste<br>
Green onions, to taste<br>
Chopped peanuts, to taste<br>
½ cup creamy peanut butter<br>
1 clove garlic, crushed<br>
2 teaspoons sesame oil<br>
¼ cup rice wine vinegar<br>
3 tablespoons <a href="https://www.amazon.com/Coconut-Secret-Organic-Raw-Aminos/dp/B003XB5LMU/ref=sr_1_4_a_it?ie=UTF8&qid=1507844771&sr=8-4&keywords=coconut%2Baminos&th=1">coconut aminos</a><br>
1½ tablespoon maple syrup<br>
Water, as needed<br>
Salt, to taste<br>
1.) Combine the dressing ingredients in a blender and process until smooth.
2.) Assemble the salads on plates or in a large bowl and top with the sliced veggies and herbs. Drizzle with dressing before serving.
