This Mexican Chopped Salad is a salad that I never get tired of. It’s loaded with so many colors, textures and flavors and not to mention many important nutrients our bodies crave! The bright and tangy dressing goes perfectly with these fresh ingredients and reminds me of the warm summer months that lie ahead!

####Mexican Chopped Salad
Prep Time: 10 minutes | Serves: 3-4
4 cups romaine lettuce, chopped<br>
2 cups cabbage, shredded<br>
1 cup tomatoes, diced<br>
1 cup jicama, diced<br>
½ cup red onion, diced<br>
1 cucumber, diced<br>
1 bell pepper, diced<br>
1 avocado, diced<br>
2 oranges, 1 peeled and chopped and 1 juiced<br>
½ cup cilantro, chopped<br>
½ cup pumpkin seeds<br>
6 tablespoons olive oil<br>
3-4 tablespoons orange juice<br>
2-3 tablespoons apple cider vinegar<br>
½-1 tablespoon honey<br>
1 teaspoon salt<br>
Freshly ground pepper, to taste<br>
Chili powder, to taste<br>
1.) Whisk together the dressing ingredients. Combine the salad ingredients together in a large bowl and toss with the dressing until everything is evenly coated. Serve immediately.
