This recipe for Key Lime Pie is not only simple and delicious (and good for you too) but it doesn’t even require you to turn on the oven! Just simply throw all the ingredients for the filling into a blender or food processor and process until smooth. We jokingly call this “guacamole pie” because of the avocados, but honestly you can’t even taste them- they’re only there to provide that creamy texture I love about key lime pie. Be sure to give this one a try, with some whipped cream or coconut cream on top! <center> ``Quick tip: Make one day ahead of time so you don’t have to wait for it to harden before slicing!`` ####Key Lime Pie Prep time: 70-80 minutes | Serves: 8 </center> ####<b>Ingredients:</b> Crust:<br> 1½ cups <a href="https://www.amazon.com/Hearthy-Foods-Almond/dp/B01K5FI8RG/ref=sr_1_1_sspa?ie=UTF8&qid=1507924079&sr=8-1-spons&keywords=organic%2Balmond%2Bflour&th=1">almond flour</a><br> ¼ cup coconut oil, melted<br> 2 tablespoons honey<br> Filling:<br> 2 avocados<br> 1 cup dates, pitted and softened in hot water<br> ¼ <a href="https://www.amazon.com/Artisana-Organics-Coconut-Certified-Handmade/dp/B012Q04O6M/ref=sr_1_3_sspa?s=grocery&ie=UTF8&qid=1507924362&sr=1-3-spons&keywords=coconut+butter&psc=1">coconut butter</a>, softened<br> ⅓-½ cup key lime juice (or regular limes)<br> 1 tablespoon lime zest<br> 1 teaspoon vanilla<br> ####<b>Directions:</b> 1.) In a bowl, mix together the almond flour, melted coconut oil and honey until it comes together as a dough. Press the dough into a pie pan, then place in freezer while making the filling. 2.) In a blender or food processor, process the avocados, dates (drained), coconut butter, lime juice, zest, and vanilla until smooth. 3.) Pour the filling into pie crust and place in the refrigerator for about one hour to set up before slicing and serving.
