Kale-Artichoke Chicken Casserole

This Kale-Artichoke Chicken Casserole was a huge hit with my family! It’s almost like an entree version of artichoke dip, but taken to the next level. I added spinach to mine because I had it on hand, but chopped up broccoli or cauliflower would be great additions! Please be sure to only buy cheese that is made with organic and grass-fed dairy. It’s more expensive but worth every penny! <center> ``Quick tip: Bake it in a 9x13” pan and serve it as an appetizer!`` ####Kale-Artichoke Chicken Casserole Prep Time: 10-15 minutes | Cook Time: 15-20 minutes | Serves: 4 </center> ####<b>Ingredients:</b> 1 tablespoon coconut oil<br> 1 pound free-range chicken breast, thinly sliced<br> ½ onion, diced<br> 2 cloves garlic, minced<br> 12 oz. artichoke hearts, chopped<br> 1 cup cremini mushrooms, sliced<br> 2 cups kale, packed and chopped<br> 2 cups baby spinach, packed<br> ½ cup full-fat Greek yogurt<br> 1 cup mozzarella, shredded (plus more for sprinkling)<br> ½ cup parmesan, shredded (plus more for sprinkling)<br> Salt and freshly ground pepper, to taste<br> ####<b>Directions:</b> 1.) Preheat the oven to 450°F. 2.) In a large skillet over medium-high heat, melt the coconut oil. Once hot, cook the chicken breast until about halfway cooked. Add the onion and garlic and sauté for 3-4 minutes. Add the artichoke hearts, mushrooms, kale and spinach and cook until the kale is wilted. Pour any excess liquid from the pan and season to taste with salt and pepper. 3.) Place the veggie mixture in a large bowl and fold in the Greek yogurt and shredded cheeses. Pour into a casserole dish or 8×8” pan and top with more mozzarella and parmesan. I used about 3-4 tablespoons of each. 4.) Bake for about 10 minutes, or until the top is browned and the cheese is bubbly. Serve with salad or sides of choice.
