I’ve made these jalapeño poppers before but this time I thought I’d try roasting the jalapeños before stuffing them. In my opinion, this extra step helped mellow out the heat but because the jalapenõs were already cooked before stuffing them, it was a little more difficult to spoon the cream cheese mixture in. This recipe still came together very easily and the final product was nonetheless delicious, as they disappeared in a matter of minutes! <center> ``Quick tip: Try using prosciutto instead of bacon sometime, it works fantastically!`` ####Jalapeño Poppers Prep Time: 15 minutes | Cook Time: 20-30 minutes | Serves: 4 </center> ####<b>Ingredients:</b> 12 jalapeños<br> 4 ounces cream cheese, softened<br> 8 ounces uncured bacon, cut in half<br> Salt and freshly ground pepper, to taste<br> 1 tablespoon coconut oil<br> ####<b>Directions:</b> 1.) Preheat the oven to 350° F. Toss the jalapeños in avocado oil and sprinkle with salt and pepper. Roast for 10 minutes. Cut down the center of one side of the jalapeño (do not cut off the top or cut completely open) and remove the seeds. 2.) Turn the temperature up to 450° F. Fill each one with cream cheese and shape back into the shape of the jalapeño. 3.) Wrap with 1 piece of bacon and secure with a toothpick if necessary. Bake on a parchment lined sheet pan until the bacon is crisp for 15-20 minutes. Allow to cool slightly before serving.
