Often times, ice cream is regarded as an off limits item because it’s loaded with all kinds of junky ingredients. This recipe for ice cream is what I like to make for myself and my family when we’re in the mood for a sweet treat. Depending on the ripeness of the bananas I’m using, sometimes I will add a little maple syrup, honey or stevia. Most of the time, the bananas add the sweetness I’m looking for, which is perfectly accompanied by some chopped pecans or almonds and a little dark chocolate. You don’t have to feel guilty for making this once in a while and I hope you enjoy it as much as my family does! <center> ``Quick tip: Try adding a spoonful of peanut butter or your favorite nut butter to the mix!`` ####Ice Cream Prep Time: 1-2 hours | Serves: 4-6 </center> ####<b>Ingredients:</b> 2 cans full-fat coconut milk<br> 1½ teaspoons vanilla extract<br> 2 frozen bananas<br> Honey, maple syrup or stevia, to taste (optional)<br> Optional toppings: chopped nuts, seeds, dark chocolate, berries, etc.<br> ####<b>Directions:</b> 1.) Combine all ingredients in a blender or food processor and blend until thick and smooth. 2.) Place in a store in a air-tight container in the freezer and allow to freeze before scooping. Other flavors can be made by substituting other frozen fruits or extracts and any desired toppings can be used as well.
