These Pumpkin Spice Muffins are a fall favorite in my household. Even if you aren’t necessarily “gluten free,” these muffins are a tasty treat that will really help you get into the season. One of the things I really like about these is that they’re not overly sweet, so you don’t have to feel bad about eating a couple for breakfast or a mid-morning snack. Preheat the oven to 350°F and line a muffin tin with parchment liners or lightly grease with coconut oil spray. 2.) In a large bowl, whisk together all the dry ingredients. Whisk together all the wet ingredients in a separate bowl, then carefully mix into the dry ingredients until no lumps remain. Fold in the raisins or nuts, if using. 3.) Scoop the batter into the prepared muffin tin and bake for 20-25 minutes or until a toothpick comes out clean when inserted in the center.
