This Coconut Rice goes perfectly alongside any Thai or Indian dish but it’s equally delicious with just about any other style entree. If you’re not a huge fan of cilantro and/or lime, they can easily omitted and will still yield a tasty final product. We don’t have rice often, as we like to find alternative ways to eat more veggies, but sometimes it just goes best with what I’m making for dinner. Coconut cauliflower rice is a great substitution if you’re limiting your carbs!

####Easy Lime-Coconut Rice
Prep Time: 5 minutes | Cook Time: 15-20 minutes | Serves: 4
1 cup white rice<br>
1 can full-fat coconut milk<br>
¼ cup water<br>
½ teaspoon lime zest<br>
Pinch of salt<br>
Cilantro, chopped for serving<br>
1.) In a medium pot with a tight fitting lid, bring all the ingredients to a boil. Cover and lower the heat to a simmer and cook for 15-20 minutes (or until all the liquid has evaporated). Remove from the heat and let sit for about 5 minutes, then fluff. Serve with cilantro on top, if desired.
