Learn How To Make 7 Meals In 7 Minutes

Typically if you were to order “Chicken Satay” at a Thai restaurant, you would get skewered meat that has been grilled and is served with a peanut sauce. I was in a pinch and needed to make dinner in a timely fashion, so I decided to skip the skewering and just sauté instead. This version was just as good as the original and it was the perfect topper for our Spring Roll Salad from the other day. My family loved this dish and I hope yours does too! <center> ``Quick tip: To make the traditional “satay” way, skewer the strips of chicken and grill until done.`` ####Chicken Satay Sauté Prep Time: 2½ hours | Cook Time: 15-20 minutes | Serves: 4-6 </center> ####<b>Ingredients:</b> 1-2 tablespoons coconut oil<br> 2 pounds chicken breast, boneless, skinless and sliced<br> 1-2 tablespoons yellow curry paste<br> 1 teaspoon fresh ginger, grated<br> 1 teaspoon garlic powder<br> 1 teaspoon salt<br> 1 can full-fat coconut milk<br> 1 lime, juiced<br> Optional for serving: Peanut dressing from the Spring Roll Salad<br> ####<b>Directions:</b> 1.) Blend the coconut milk with the curry paste, lime juice, ginger, garlic and salt until smooth. Pour over the chicken slices in a ziplock bag and place in the refrigerator to marinate for at least 2 hours and up to overnight. Mix the bag around every so often if you think of it. 2.) Drain the chicken and discard the liquid. Melt the coconut oil in a large skillet over medium-high heat. Once it’s shimmery, add the chicken to the pan in batches (be sure to not overcrowd or they will not brown) and cook until golden brown. Flip and cook until the other side is golden brown and the center is no longer pink. 3.) Continue to cook the rest of the chicken, then serve immediately with peanut sauce and any other desired sides.
