This Cheesy Italian Quinoa Bake was a huge hit at my house! We had my in-laws over for dinner and this dish was devoured! Casserole dishes are perfect for serving a group of people and if there are any leftovers, it makes for another quick and healthy meal that just needs to be heated up. I think the leftovers were even more tasty, as the flavors had a chance to meld together a bit more. I hope this recipe is enjoyed by your family as it was mine!
``Quick tip: I highly recommend only using organic rotisserie chicken meat. If that is not available, I suggest getting organic chicken breasts or thighs and cooking them at home so you can avoid the pesticides, hormones and GMOs.``
####Cheesy Italian Quinoa Bake
Prep Time: 10-15 minutes | Cook Time: 30-40 minutes | Serves: 6-8
3 cups organic rotisserie chicken, shredded<br>
1-2 zucchini, shredded<br>
1 cup uncooked quinoa, rinsed and drained<br>
2 cups chicken broth<br>
1 can fire-roasted tomatoes<br>
2 tablespoons tomato paste<br>
¼ cup full-fat coconut milk<br>
Pinch of red pepper flakes<br>
Salt and freshly ground pepper, to taste<br>
1 teaspoon garlic powder<br>
2 teaspoons Italian seasoning<br>
½ cup parmesan cheese, shredded<br>
1½ cups mozzarella cheese, shredded and divided (plus more for sprinkling, if desired)<br>
1 cup grape tomatoes, cut in half<br>
½ cup fresh basil, chopped<br>
1.) Preheat oven to 375°F. In a small saucepan, bring the chicken broth to a boil, then add the quinoa. Cover and lower the heat to a simmer and cook for about 12-15 minutes. Remove from the heat and allow to sit for about 5 minutes, then fluff with a fork and set aside. Shred the zucchini and wring out the excess liquid in a clean dish towel.
2.) In a large bowl, combine the chicken, quinoa, zucchini, tomatoes and tomato paste, spices, parmesan, ½ cup of mozzarella and basil. Stir well and pour the mixture into a 9×13” baking dish and top with the remaining mozzarella and tomatoes. Bake for 10-15 minutes, or until the cheese is melted bubbly and it’s heated all the way through. Top with fresh basil and serve.
