The next time you’re in the mood for pizza, give this a try! This Italian Sausage Cauliflower Pizza Casserole will appeal to even the picky eaters and it will taste like you’re eating pizza but without the carb overload. Cauliflower is extremely versatile and is a great ingredient for dishes like this. It’s loaded with fiber and other nutrients like Vitamins C, K & B6, manganese and folate (to name a few), and will take on just about any flavors it’s cooked with. This meal was gone within minutes when I made it, so I recommend making a double batch just in case! It’s even approved by the little ones!

####Italian Sausage Cauliflower Pizza Casserole
Prep Time: 20-25 minutes | Cook Time: 10-15 minutes | Serves 3-4
1 large head cauliflower, chopped<br>
1 pound Italian sausage casing removed<br>
½ onion, diced<br>
2-3 cloves of garlic, minced<br>
½ green bell pepper, chopped<br>
2 cups mushrooms, sliced<br>
1 (14 oz.) jar pizza sauce (no sugar added)<br>
½ cup fresh basil, chopped<br>
1 cup black olives, chopped<br>
1 teaspoon Italian seasoning<br>
½ cup parmesan, shredded<br>
Salt, to taste<br>
1- 1½ cups mozzarella, shredded<br>
Pepperoni, for topping (optional)<br>
1.) Preheat the oven to 400° F. Place the cauliflower in a small pot and steam until fork tender. Drain and set aside. In a large skillet, cook the sausage, breaking it up into pieces as it browns. Once it’s about halfway cooked, add the garlic, onion, bell pepper and mushroom. Cook until fragrant and mushrooms have softened. Remove from heat and set aside.
2.) In a medium bowl, combine the cauliflower, sausage mixture, pizza sauce, basil, olives, Italian seasoning, parmesan and salt. Mix until evenly coated and place in an 8×8” or 9×13″ baking dish. Sprinkle with mozzarella and top with pepperoni, if using. Bake until cheese is browned and bubbly, about 10-15 minutes. Serve with any other sides of choice.
