####Blueberry-Nectarine Salad with Apple Cider Vinaigrette
Prep Time: 10 minutes | Serves: 2
4-6 cups spring mix<br>
½ cucumber, thinly sliced<br>
½ cup blueberries<br>
1 nectarine, sliced<br>
2-3 tablespoons sunflower seeds<br>
For the dressing:<br>
¼ cup olive oil<br>
1-2 tablespoons apple cider vinegar<br>
1-2 teaspoons honey<br>
2-3 teaspoons Dijon mustard<br>
Garlic powder, to taste<br>
Salt and freshly ground pepper, to taste<br>
