BLT Salad with Bacon-Herb Dressing

I’m not much of a sandwich person, but every now and then I crave a classic BLT. I thought it would be great in salad form, which explains how this recipe was born. I was shooting to make this a main dish, so I added chicken to bulk it up. I believe it is very important to only get organic, humanely raised bacon (and chicken), so please be aware of where your meat comes from (all meat!). I know it’s more expensive but believe me, it’s worth it! <center> ``Quick tip: Don’t be scared to make your own dressing! You can customize it to what you want and you also know what’s in it! No preservatives, no chemicals and it’s a lot cheaper too.`` ####BLT Salad with Bacon-Herb Dressing Prep Time: 10 minutes | Cook Time: 15-20 minutes | Serves: 2-4 </center> ####<b>Ingredients:</b> 1½ pounds chicken breast or thighs, boneless and skinless<br> 4-6 cups spring mix or lettuce of choice<br> ½-1 cup cherry tomatoes, halved<br> ½ pound uncured bacon<br> ½-1 avocado, sliced<br> Salt and freshly ground pepper, to taste<br> Garlic and onion powder, to taste<br> Dressing:<br> 1 avocado, diced<br> 2 tablespoons lemon juice<br> 3-4 tablespoons bacon fat<br> 2-3 tablespoons apple cider vinegar<br> 1-2 tablespoons full-fat coconut milk<br> 1 clove garlic, smashed<br> Salt and freshly ground pepper, to taste<br> 1-2 tablespoons fresh herbs (basil, dill, oregano, thyme, etc.)<br> Water, as needed<br> ####<b>Directions:</b> 1.) In a large skillet, cook the bacon until crispy. Remove from the pan and reserve 2-3 tablespoons of the bacon fat for the dressing. Chop the bacon when cooled. 2.) Heat the remaining fat in the pan and add the chicken breast. Season with salt, pepper garlic and onion powder and cook until no longer pink in the center. Allow to cool for a few minutes before slicing. 3.) Combine all the dressing ingredients in a blender and process until smooth. Thin out with water until the desired consistency is reached. Taste and adjust seasonings if necessary. 4.) Place the lettuce in bowls or on plates and top with bacon, tomato, avocado and chicken as desired. Drizzle with dressing and top with chicken (if using) before serving.
