I don't want to keep you here for too long, today, but I do want you to know who I am.

As I shared a moment ago, I am Katie, and I used to be the queen of eating out. I'm just a regular woman. I'm a mother. I'm a wife. And I am a professional.

Between my work and my family life, I really didn't have time to cook the way I wanted to.

KatieI'd finish work around 5pm and know I had another couple of hours in the kitchen before I could ever get a meal on the table...and that was super discouraging.

So I started going out to eat, because I thought it would save me a lot of time. If I can be honest, I just really didn't want to be like my mom in this one area.

Now, I don't know about you, but I grew up with a mother who spent hours in the kitchen — every day — cooking for me and my brothers and our dad.

And I kind of thought that's how you do it once you become an adult. If you want healthy meals....you get home from work or you get done with whatever you've been doing all day, and you start cooking.

For yourself. And for your family if you have one.

I Knew It Would Take Me HOURS
To Get A Meal On The Table Each Night

Not only that, but I felt like I'd be a horrible wife and mother if I wasn't slaving away doing "motherly" duties. And it was really, really hard to find some kind of balance.

Mother MultitaskingI felt like I had to take care of everything, do everything, and think three steps ahead of everyone just so I could stay on top of our health and nutritional needs.

It can be almost too overwhelming trying to do everything well as a woman. And once you add a spouse and kids to that mix...well. You get it.

I simply didn't want to live that way. So I ate out. And my family ate out a lot, too. And though I tried hard to make sure all our food was healthy, there were definitely occasions when it wasn't as nutritious as it could have been if I'd just cooked at home.

I wasn't doing my bank account any favors, either.

I had to figure out a way to stop rebelling against my own idea of what it meant to be a responsible adult woman, a wife, and a mother.
